Vegan knoepfle with melted sauce


  • 150 g sweet potatoes
  • 1 carrot
  • 50 g cashew nuts
  • 3 tbsp yeast flakes
  • 2 tsp vegetable stock
  • 1/2 to 1 cup of water (depending on desired consistency)
  • 1 tbsp lemon juice
  • 1 pinch turmeric
  • 1 tsp salt
  • fried onion
  • chives


  1. Chop the sweet potatoes and carrots and cook in a pot of water over medium heat for about 15 minutes.

  2. Mix together with cashews, yeast flakes, vegetable stock, lemon juice and turmeric in a blender and puree for up to 10 minutes.

  3. Flavour the sauce with salt.

  4. Cook the Knoepfle according to instructions and serve with the sauce, fried onions and a handful of chives.

Our tip: 
For a particularly fine sauce, the cashew nuts should soak in water for about 8 hours or soak in hot water for at least one hour.
