Hearty Seitan roast with festive walnut apple filling.

1 kilos of the finest veggie roast from L'Herbivore. A successful combination of hearty seitan, crunchy walnuts and an aromatic fruit sweetness. Christmas seasoned with coriander, nutmeg, apple and cinnamon.

The unique filling of apples, walnuts, red wine vinegar and raisins makes the Seitan roast particularly juicy from the inside out. For a first-class, vegan festive roast. Fits classic side dishes like potatoes or dumplings with red cabbage. Preparation recommendation

Preheat the oven. Remove the roast from the package and place it in a baking dish¹. Heat up the marinade and pour over the roast². Place the baking dish with the poured roast in the middle of the oven on a grate.


Preparation

The preparation of the side roast in the oven requires great attention. The roast should be kept slightly moist at all times. To do this, the marinade in the mould must be poured over the roast in the oven at regular intervals³.


Preparation time & oven temperature

As every oven is slightly different, it is not possible to specify a completely uniform preparation time. The roast will take between 1 1/4 and 2 hours in the oven to be ready&sup4;. It is therefore better to plan two hours before serving, starting at a lower temperature (around 175°C) and increasing it if necessary if the roast does not heat up quickly enough.

Serve the sliced roast coming out of the oven directly.

1 A not too large casserole dish is best, so that the roast floats easily in the marinade. The optimum distance from the roast to the edge is a tablespoon's width, so that the marinade can be ladled well.

2 Add spices as required when reheating, e.g. cinnamon sticks, star anise or cloves.

3 The roast is already cooked and ready to eat. During preparation, it is therefore only a matter of heating it through completely. Newer ovens with circulating air often achieve uniform results faster than older electric ovens, for example. Be careful with ovens with uneven top or bottom heat - here, turn the whole roast as required!

4 A good method to determine the best serving time is to measure the core temperature - 80-90 °C filling temperature is optimal.
